Gluten-free and Egg-free “Birthday Cake” Cookies

Yesterday I needed to make a birthday gift for my friend within just an hour. 🎁 She mentioned she doesn’t eat gluten or eggs and I know she has a sweet tooth. 🍪 So that’s what I did. Came out great.

Writing the recipe how I remember it ✏️ (you know how it is when you do things in the rush, pinch if this-pinch it that…). Will definitely do it again and will correct it if needed.

🍪 Chocolate Gluten Free & Egg Free Birthday Cookies 🎂 (by Elena Shumskaya)

1.5 c almond flour

0,5 c corn starch

1/2 c oil

2/3 c sugar

1/5 c cocoa

1/2 c water

1/4 tsp salt

1/3 tsp baking soda with 1/2tsp vinegar

1/2 tsp vanilla
1/2 tsp cinnamon

Roll on small balls, place on oiled backing sheet. Bake @ 350 for 10-15 min, just till done.

It helps to freeze for a 5-7 min the cooled baking sheet with cookies to remove them from it before filling.

Chocolate Cream Filling:
1 c chocolate chips melted with
1/4c -1/2(?)c of butter
Vanilla optional

Decorated them with strawberry mentos candies, just because.
